The Clove Bitter stands out from the others for a particular aroma, very intense, balsamic but on the palate we would say "sweet and slightly spicy". With Pimento and Cinnamon it finds its maximum expression and we could say that they form an unbeatable trio. Try it on blue cheeses and red meat.
